Squash Bread / Magic Bread

1- 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tsp ground cinnamon
2 eggs
3/4 c sugar
1/2 c vegetable oil
2 tsp vanilla
1-1/3 cup shredded yellow squash

Combine all dry ingredients. In a separate bowl combine all the wet ingredients. Add to dry ingredients mix just until moistened. Pour batter into a greased loaf pan and bake at 350 degrees for about 50 minutes or until toothpick inserted into center comes out clean.

I call this magic bread because my Dad called me late yesterday afternoon to tell me he had made this with chopped apples instead of the squash and it turned out delicious. I made a loaf last night using some chopped apples and leftover applesauce and he was right! I only got one slice because the boys and Thane gobbled it up it was that good! Now that Dad has got my mind turning we are going to try to substitute with blackberries, blueberries, mmm the possibilities are endless! Thanks Dad!!

I've got gallons of blueberries in the freezer, so I might try them first, but I'll check the store for squash!

It is a delicious bread. My kids won't even eat squash unless I make it this way lol.
