Pickle Spice Mixture

My Cucumber are just now beginning to bloom and hopefully we will have lots of cukes to make pickles.

Pickling Spice Blend

Combine 2 TBS each:

allspice berries
cardamom seeds
coriander seeds
whole cloves
mustard seeds
peppercorns

Add:

2 bay leaves (crumbled)
2 cinnamon sticks (broken)
2 small pieces dried gingerroot (chopped)
2 small dried red chilies (crushed) or 1-2 tsp hot pepper flakes.

  • Store in a tightly sealed container until ready to use.
